Torras Chocolata Blanca Fondant is a sugar-free white chocolate couverture block designed for professional confectioners with the following specifications:

  • cocoa mass content 27%
  • fat mass content 32%
  • 3/5 liquefaction
  • tempering temperature 30 ° C-32 ° C
  • fusion temperature 45-50 ° C
  • hardening 28-29 ° C
  • optimal applications: decoration, filling of praline molds, fillings
  • to prepare a glaze based on these drops, increase the fluidity of the mass by adding 2% sunflower oil or cocoa butter in the bath; do not add water or any preparations based on it, e.g. milk

Tip: in order to melt the chocolate in the microwave oven, set the device to a maximum power of 500W and heat up in stages lasting up to 90 seconds, stirring the chocolate mass after each heating until it reaches a homogeneous consistency.
