My first impression? If this flavor were to hit the US market, they would probably call it ranch. It's fresh, slightly sour, and delicately herbal. There is a yogurt and buttermilk note that gives the impression of a cool, creamy background – even though there is no classic "sauce" in the ingredients. This is the result of well-balanced spices and acidity.
But there is more to it than that.
There is a subtle sweetness of beetroot – and it is responsible for the characteristic pink hue. It is not a dessert sweetness. Rather, it is natural, vegetable-like, slightly earthy. Added to this are citrus accents: lemon juice, lemon and orange zest, lemon extract. The whole thing is enhanced with spices – juniper, ginger, coriander – which add a minimal spiciness and aromatic depth.
The longer I ate them, the more I had one association: beetroot salad with onion and lemon juice. So fresh, slightly sour, delicately sweet, with a noticeable onion note. Those who have eaten it know. And this is exactly the flavor captured in an ultra-thin, perfectly crispy chip.
It's an unusual flavor. The first time you try it, it surprises you. The second time, you start to pick up on the nuances. And I'm sure that the next time I try it, I'll discover something new again – because this composition is truly unique.
