Guar gum is a natural polysaccharide extracted from seeds - it is obtained from the seeds of the guar legume (Cyamopsis tetragonolobus L.) found in areas of India and Pakistan and is one of the components of soluble fiber.

Guar gum is in the form of a yellowish-white powder, almost odorless. It dissolves in cold water.

As a thickening agent, guar gum is used to thicken soups, low-fat mayonnaise and salad dressings, beverages, vegetable juices and low-calorie foods. As a thickening and water-binding agent, guar gum is used in baked goods and cakes. It gives a malleable and sticky texture to low-calorie dairy flavored drinks and desserts.

Guar gum exhibits particularly good properties when combined with xanthan gum, significantly increasing the viscosity and gelatinous nature of the finished mixture.
