While the greatest diversity of lupine species is on the American continents, the plant can be found practically all over the world, and its crops are also found in Poland. While many varieties are poisonous due to their alkaloid content, some species are used as a feed ingredient, as well as a raw material for making low-carbohydrate flours.
Lupin flour instead of traditional wheat flour?
Lupin flour is made from ground sweet lupin seeds. The grinding of the lupine seeds results in a flour that has a grain structure that somewhat resembles corn flour. Ground lupine seeds (lupine flour) can be slightly salty, sweet, and even have a hint of bitterness in them - in fact, it is practically undetectable.
Lupinflour is an ideal substitute for wheat flour and, due to its delicate taste, neutral character and other features, it is readily used for baking bread - making bread, rolls and other baked goods. It has excellent binding properties, which is important for gluten-free keto baking. When combined with water, it can serve as an egg substitute. In addition, it prolongs the freshness of baked goods. For this reason, it is often used in making breads, pancakes, cakes, pies, waffles, desserts, dumplings, pasta and pies.
