What is the Glycemic Index?
The Glycemic Index (GI) describes the properties (rate of absorption) of the carbohydrates in the foods we eat, but does not take into account the amount of carbohydrates consumed in a given meal.
In order to determine what effect eating a particular amount of carbohydrates actually has on blood sugar levels, we need to use the second parameter, the glycemic load. GL (glycemic load) expresses the number of insulin released into the blood after eating a given meal. The glycemic loads of the components of a given meal, as well as of all meals during the day, can be added up. It has been proven that meals with a GL of less than 20g (thus increasing insulin levels by the same amount as 20g of pure glucose) have little effect on blood sugar spikes. It is optimal to eat three meals a day with a GL of no more than 20 and two snacks with a GL of no more than 10.
