Low-carbohydrate, high-protein and high-fiber lupine flour is a perfect alternative to regular flour and an ingredient in bread, cookies, pasta and gluten-free pancakes. Unlike nut flours, which have a slightly sweetish taste, lupine flour is slightly salty and has a grain structure resembling fine corn flour.

Lupine flour is a rich source of protein and fiber, which makes you feel full for a long time, and its low glycemic index prevents attacks of hunger and snacking on sweets.

Organic roasted sweet lupine flour. Lupine is an ancient crop and was already an important staple food of the natives of South America. It is one of the legumes. The original varieties contained a large amount of bitter substances, but this could be reduced with modern breeding. Therefore, these new varieties were given the name sweet lupine. A type of coffee substitute formerly made from roasted fruit. Sweet lupine flour is made from the seeds. To make this flour tastier, it is additionally roasted. Of course, it is available in the best organic quality.

Sweet lupine flour is characterized by a particularly high content of valuable plant protein, which is in no way inferior to the content of soy. This makes it a qualitatively equivalent and ecologically sound regional alternative to soy. Compared to whole grain flour, organic sweet lupine flour contains almost four times more protein. Sweet lupine protein contains eight important amino acids. The glycemic index is comparable to the glycemic index of soy.

Keto baking with lupine flour - rules and tips

If you want to bake with it, you can even keep one or two eggs in the recipe, as the flour has a very high fat content, which helps the dough bind. A rule of thumb for baking: as much as 15% of the total amount of flour can be replaced with this valuable food product.

If you don't want to use soy flour, you can easily replace it with the same amount of sweet lupine flour. It can be added to juices or smoothies, drank mixed with water as a type of protein shake, used as a binder, added to soups, and even used as an ingredient in salad dressing. Or maybe a homemade spread, for example made from tomato paste, olive oil, sweet lupine flour, various spices and chopped cashews? Vegan or vegetarian patties made with this flour, oatmeal, chopped onion, spices and finely grated vegetables such as carrots are a delicious variation. Lupine flour is also very popular in protein bread.

When cooking with lupine flour, remember to add more liquids - e.g. a heaped spoon of natural yogurt because the fiber contained in lupine flour absorbs liquids.
