Lupina is a gluten-free, heavily skimmed flour from Australian crops without GMO, characterized by an extremely high content of protein and fiber, low carbohydrate content and a high degree of degreasing - naturally oily lupine seeds have been defatted to a dry, silky flour with a fat content of less than 7%, thanks to which flour is only 246kcal in 100g, which makes it one of the least caloric low-carbohydrate flours.
Low-carbohydrate, high-protein and high-fiber lupine flour is perfect as an alternative to ordinary flour and an ingredient of bread, cookies, pasta or gluten-free pancakes. Unlike nut flours, which have a slightly sweet taste, lupine flour is slightly salty, with a grain structure resembling fine corn flour.
Lupine flour is a rich source of protein and fiber, thanks to which it gives you a feeling of fullness for a long time, and its low glycemic index prevents hunger and snacking.
When cooking with lupine flour, remember to add more fluids - e.g. a heaped spoonful of natural yoghurt because the fiber contained in lupine flour absorbs liquids.
