How was this aroma created?
I wanted to bring fresh ideas to our aromatics, I wanted a person who is very creative culinarily, committed to healthy activity, cool balanced food, but at the same time has no idea about building aromatics and what limitations are associated with them. I proposed a collaboration to Marti, whom I have been following on Instagram for a long time, and whom I adore for her creativity, straightforwardness, warm, joyful sincerity and empathy beaming from her. Martina accepted the offer to come up with a flavor and set about coming up with a very matter-of-fact one - when I got the list of her ideas, I can't hide, my jaw dropped.... From w-impression and over-impression, I was afraid I wouldn't be up to the challenge thrown my way!
For 3 weeks I collected aroma experiments, frying butter, long, short, strong heat, medium, stirring, clarifying, adding sugar, analyzing the degree of browning of breadcrumbs and its effect on the aroma notes, slicing kopytka and studying whether it was better to fry them solo or add butter, whether it was better to fry them hot or cold, the options and variations were dozens!
Then it was time to compose and look for a formula that would perfectly reflect the kitchen ideal of grandma's kopytki fried in butter with browned breadcrumbs, a little caramelized sugar and a pinch of cinnamon - it was important that the exotic cinnamon did not dilute with its intensity the nuances of grandma's climate.
And finally the aroma came into Marti's hands for testing - I was eagerly awaiting her evaluation!

"I don't know what fairy is helping you create these compositions but this is a perfect 1:1 reproduction of noodles on butter at grandma's house. I close my eyes and see this big cast iron pan with butter and noodles with breadcrumbs and a pinch of cinnamon Very but it's very much on the plus side for me that the aroma is not so aggressive making it not easy to overdo it and this will also be a nice argument for someone who wants to start his adventure with aromas, because I chose my first one with peanut o I overdid it so easily at the beginning that sometimes it was too bitter - well we learn from our mistakes
As for me it works perfectly and for baked goods and dairy products - here you know the issue is strongly individual, but as for me it fits, does not knock out the acidity and even with lazy - add to cottage cheese no BEAUTIFUL ! "
What are kopytka?
Kopytka are a traditional Polish dish that can be described as potato dumplings. They are made from a simple dough consisting of cooked and mashed potatoes, flour, and a small amount of egg to bind the mixture. The dough is rolled into thin logs, then cut into small, diamond-shaped pieces, resembling little hoof shapes – which is where the name "kopytka" (meaning "little hooves" in Polish) comes from.
These dumplings are boiled until they float and have a soft, pillowy texture. Kopytka are often served as a side dish with savory toppings such as buttered breadcrumbs, fried onions, or creamy mushroom sauce. They can also be enjoyed as a main dish, sometimes paired with meat or vegetables. In some variations, they are lightly pan-fried after boiling for a crispy outer layer.
A particularly beloved way to enjoy kopytka, especially in Polish households, is with buttered breadcrumbs ("bułka tarta smażona na maśle"). This topping involves toasting breadcrumbs in melted butter until golden and fragrant, then generously sprinkling them over the warm dumplings.
