Cacao Barry Légère 1% is a defatted, highly alkalized cocoa powder, containing less than 1% cocoa butter, which gives an increased dough volume (+20%) and lower product density (better shape stability during baking) compared to standard cocoa powder. Cocoa Légère 1% is ideal for aerated recipes and low-calorie use. This is the best cocoa for macaroons!

Légère 1% is ideal for low calorie applications (e.g. sports and diet products) and aerated baking recipes such as macaroons, croissants and meringues. Its very low fat content also reduces the risk of fat blooms in your spreads. Cocoa has been obtained in a sustainable way, which is ensured by the Cocoa Horizons foundation.

Regular defatted cocoa contains about 10-12% fat and provides about 300kcal - 320kcal in 100g. Barry Callebaut Cacao Légère is the least caloric cocoa, and at the same time cocoa with the lowest fat content - the advanced process of defatting cocoa beans allows you to reduce the fat content to only 1% - no other cocoa is so low in calories!

Cocoa Légère 1% is a fine cocoa powder. The minimum particle size is 99.5% < 75μm. As a general rule, the finer the cocoa powder, the better the flavor release, smoother and consistent color for the best aesthetic results.

The cocoa is in a new packaging, which has been equipped with a lock that allows it to be opened and closed many times (see in the gallery). The new bag protects the cocoa powder from degradation by keeping air and moisture out while limiting unwanted powder lump formation. This planet-friendly packaging is made of a mono-material (bag and label): polyethylene (PE). As a result, the packaging can be collected, sorted and then successfully recycled.
